Calling all experts in the woods! Which wood is good (or not) to cook a knife handle? Toxicity?

I'm doing a head knife for my sister and I get the wood for the scales (handle side). I know a lot of wood have a certain level of toxicity, and I prefer not to gather around Food. I want a good knife handle well! What wood is safe? preferably something black (or at least not the light, like maple) with a wow! grain. All ideas and tips are greatly appreciated!

walnut or oak or ebony is good if you can afford
